(One pan, rich flavor, and perfect for a quick dinner)
Ingredients

1½ lb steak (sirloin, ribeye, or NY strip), cut into bite-size pieces

1½ lb baby potatoes, halved

3 tbsp olive oil, divided

4 tbsp butter
-
4 cloves garlic, minced
-
1 tsp dried thyme or rosemary
-
½ tsp paprika
-
Salt & black pepper, to taste

Optional: fresh parsley for garnish
Instructions

Cook potatoes
Heat 2 tbsp olive oil in a large skillet over medium heat. Add potatoes, season with salt and pepper, and cook 12–15 minutes, stirring occasionally, until golden and tender. Remove and set aside. -
Cook steak
Increase heat to medium-high. Add remaining oil. Season steak with salt, pepper, and paprika. Sear 2–3 minutes per side until browned. Remove and set aside. -
Garlic butter
Lower heat. Add butter and garlic to skillet. Cook 30 seconds until fragrant. -
Combine
Return steak and potatoes to skillet. Sprinkle with thyme or rosemary. Toss to coat in garlic butter. -
Finish
Cook 1–2 minutes until everything is heated through. -
Garnish with parsley and serve hot.

Cut potatoes evenly so they cook at the same rate.

Add green beans or asparagus in the last few minutes for a full meal.

For extra richness, add a squeeze of lemon or sprinkle of Parmesan.
