A classic Hungarian-style side dish that’s flavorful but not spicy.
Paprikás Potatoes
Ingredients
-
2 lbs potatoes, peeled and cut into chunks
-
1 small onion, finely chopped
-
2 tbsp oil or butter
-
2 tbsp sweet paprika (Hungarian paprika if available)
-
½ tsp garlic powder (or 2 cloves fresh garlic, minced)
-
Salt & black pepper, to taste
-
1–1½ cups water or vegetable broth
-
Optional add-ins: sliced sausage, bell pepper, or a dollop of sour cream
Instructions
-
Sauté onion
Heat oil or butter in a large pot over medium heat. Cook onion until soft and lightly golden. -
Add paprika
Remove pot briefly from heat and stir in paprika (this prevents bitterness). -
Add potatoes
Return to heat. Add potatoes, garlic, salt, and pepper. Stir to coat. -
Simmer
Pour in water or broth until potatoes are just covered. -
Cook
Cover and simmer 20–25 minutes, stirring occasionally, until potatoes are tender and sauce thickens. -
Adjust seasoning and serve warm.
Serving Ideas
-
Serve as a side with roasted chicken or pork
-
Top with sour cream for extra richness
-
Enjoy with crusty bread
Tips
-
Use sweet paprika, not smoked or hot, unless you want heat.
-
For creamier potatoes, mash a few pieces in the pot.
-
Add sliced smoked sausage to make it a one-pot meal.
