(Tender beef, savory sauce, and crisp peppers)
Ingredients

1½ lb beef sirloin or flank steak, thinly sliced against the grain

2 tbsp vegetable oil

1 green bell pepper, sliced

1 red bell pepper, sliced

1 small onion, sliced
-
3 cloves garlic, minced
Sauce
-
½ cup beef broth
-
¼ cup soy sauce (low-sodium if possible)

1 tbsp cornstarch
-
1 tbsp brown sugar
-
1 tsp ground ginger (or fresh, grated)

½ tsp black pepper
Instructions

Make the sauce:
Whisk together beef broth, soy sauce, cornstarch, brown sugar, ginger, and black pepper. Set aside. -
Cook the beef:
Heat 1 tbsp oil in a large skillet or wok over high heat. Add beef in batches and sear quickly (1–2 minutes per side). Remove and set aside. -
Cook vegetables:
Add remaining oil to the pan. Sauté peppers and onion for 3–4 minutes until crisp-tender. Add garlic and cook 30 seconds. -
Combine:
Return beef to the pan. Pour in sauce and stir. -
Simmer:
Cook 2–3 minutes until sauce thickens and coats everything evenly. -
Taste and adjust seasoning if needed.
