1½ lb potatoes (Yukon gold or red work best)

1½ tbsp olive oil

1 tsp garlic powder

½ tsp paprika

½ tsp dried rosemary or thyme

Salt & black pepper, to taste

Optional: grated Parmesan or fresh parsley
Instructions

Prep potatoes:
Wash and cut into 1-inch cubes. Pat very dry. -
Season:
Toss potatoes with olive oil, garlic powder, paprika, herbs, salt, and pepper. -
Air fry:
Preheat air fryer to 400°F (205°C).
Cook potatoes for 15–20 minutes, shaking the basket every 5 minutes. -
Crisp finish:
Cook until golden and fork-tender. Add 2–3 extra minutes if needed. -
Serve:
Sprinkle with Parmesan or parsley if desired.
