Hungarian Cottage-Cheese Biscuits (Túrós Keksz)
Makes: about 20–24 biscuits
Ingredients

1 cup (225 g) cottage cheese (well-drained)

½ cup (115 g) unsalted butter, softened

1¼ cups (155 g) all-purpose flour

2 tbsp sugar

½ tsp salt

1 tsp vanilla sugar or vanilla extract (optional)

Powdered sugar for dusting (optional)
Instructions

Mix dough:
In a bowl, mash cottage cheese until smooth. Mix in butter, sugar, salt, and vanilla. -
Add flour:
Stir in flour until a soft dough forms. Don’t overmix. -
Chill:
Cover and refrigerate for 30 minutes (helps with rolling). -
Roll & cut:
Roll dough on a floured surface to about ¼ inch (½ cm) thick.
Cut into squares, diamonds, or rounds. -
Bake:
Place on a lined baking sheet.
Bake at 375°F (190°C) for 15–18 minutes, until lightly golden on the bottom. -
Finish:
Cool slightly and dust with powdered sugar if desired.
