For the Meatloaf

1 lb (450 g) ground beef (or mix beef & pork)

1 small onion, finely chopped

1 egg

½ cup breadcrumbs

¼ cup milk

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp salt

½ tsp black pepper

½ tsp dried thyme or Italian seasoning
For the Caramelized Onion Gravy

2 medium onions, thinly sliced

2 tbsp butter or oil
-
1 tbsp flour
-
1 cup beef broth
-
1 tsp Worcestershire sauce

Salt & pepper to taste
Instructions
1. Make the meatloaf

Preheat oven to 350°F (175°C).

In a bowl, mix ground meat, chopped onion, egg, breadcrumbs, milk, garlic, Worcestershire sauce, salt, pepper, and thyme until combined.

Shape mixture into a loaf and place in a baking dish.

Bake for 40–50 minutes until cooked through.
2. Make the caramelized onion gravy

While meatloaf bakes, heat butter in a pan over medium heat.

Add sliced onions and cook slowly for 10–15 minutes, stirring occasionally, until golden brown and soft.

Sprinkle flour over onions and stir for 1 minute.

Gradually add beef broth while stirring to avoid lumps.

Simmer for 5–7 minutes until thickened. Add Worcestershire sauce, salt, and pepper.
3. Serve

Slice meatloaf and pour warm onion gravy over the top.

Serve with mashed potatoes, roasted veggies, or a side salad.
