1 small shallot or ¼ red onion, very thinly sliced

2 tbsp extra-virgin olive oil

1 tbsp red wine vinegar or lemon juice

Fresh black pepper

1 small clove garlic, grated or very finely minced (the “magic” part!)

Instructions

Prep tomatoes and place them in a bowl.

Add shallot/onion and the grated garlic.

Dress: Drizzle with olive oil and vinegar (or lemon juice).

Season: Add salt and black pepper, then gently toss.

Rest (important!): Let sit for 10–15 minutes so the flavors melt together.

Finish: Add basil (and any optional add-ins) just before serving.
