🥒🍞 Zucchini Bread (Moist & Easy)

🛒 Ingredients

2 cups grated zucchini (about 2 medium zucchini)

½ cup vegetable oil (or melted butter)

1️⃣ Prep
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2️⃣ Prepare Zucchini
Grate zucchini. Lightly squeeze out excess moisture with a paper towel (don’t over-squeeze — moisture keeps it soft).
3️⃣ Mix Wet Ingredients
In a large bowl, whisk oil, sugars, eggs, and vanilla until smooth. Stir in zucchini.
4️⃣ Mix Dry Ingredients
In another bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
5️⃣ Combine
Gradually mix dry ingredients into wet mixture. Fold in nuts or chocolate chips if using.
6️⃣ Bake
Pour into prepared pan. Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in pan 10–15 minutes, then transfer to a wire rack.
