1️⃣ Marinate the Beef
In a bowl, toss sliced beef with 1 tablespoon soy sauce and cornstarch. Let sit 15–20 minutes.
2️⃣ Make the Sauce
Mix remaining soy sauce, oyster sauce, sugar, black pepper, hoisin (if using), rice vinegar, and broth. Set aside.
3️⃣ Sear the Beef
Heat 1 tablespoon oil in a wok or large skillet over high heat.
Sear beef in a single layer for 1–2 minutes per side until browned (do in batches if needed). Remove and set aside.
4️⃣ Stir-Fry Vegetables
Add remaining oil. Stir-fry onions and bell peppers for 2–3 minutes until slightly tender but still crisp. Add garlic and cook 30 seconds.

Return beef to the pan. Pour in sauce and toss everything together. Cook 2–3 minutes until sauce thickens and coats the beef.
